Healthy Eats at Your Next Summer Soiree

Summer is definitely here in Chicago! To me, summer time means trips to the pool and beach, evening strolls on the lake, maxi dresses and my favorite – barbecues with friends! There is nothing I love more than throwing food on the grill, cracking open a cold light beer and relaxing outdoors with good company. The produce in the grocery stores is vibrant and just begging to be eaten. Here are some delicious and easy dishes that you can bring to your next get together:
Watermelon and Feta Salad – This salad is so incredibly refreshing. I always come back for seconds! I start with fresh spinach and arugula (any green would work just fine). I then take watermelon chunks, fresh mint and crumbled feta cheese and throw it on top. Mix everything together with some balsamic and serve. Add pine nuts for some extra crunch!
Quinoa Salad – This dish is a great side dish or can be the only thing you eat for dinner (so make more for leftovers!) I cook quinoa on the stove by following the directions. Once cooked, I add grape tomatoes cut in half, fresh chopped basil, kalamata olives, diced red and yellow pepper, ricotta salata cheese, extra virgin olive oil and pepper. Add some sliced chicken breast for a bigger punch of protein!
Radicchio Salad – This is another refreshing salad! I cut up a radicchio first and lay it in a bowl. I add chopped tomatoes and avocado. I drizzle extra virgin olive oil, balsamic, a dash of salt and pepper to the bowl and gently toss.
Anyone can stay on track even while enjoying a party. These dishes are not only delicious, but very nutritious! Take advantage of all the fresh produce and turn your next summer barbeque into a colorful one!
